Default Dinner

A corned beef, half a head of small cabbage piled into my clay oven covered with a can of l/c beer and liberal doses of pepper. Left to go for 2 hours, and that's 4 meals ready.
The first being tonight's dinner. About 6 net carbs. Cooking for one ain't that bad.
Hence this post.

I made chicken souvlaki broccolini sauted with fresh herbs, lemon juice and garlic. Mixed baby greens with grape tomatoes, a little red onion, olives, feta and walnuts with my own greek dressing. Of course since I decided to extend my super low carbs for another week all I get to eat is the chicken.

I am going to have some kind of veggie antipasto platter and a little prosciutto on the side tonight. It is too hot for cooking.

You know what would also be great? That 6 carb cheesecake from The Cheesecake Factory. Had that in Orlando and it was FAB.

Yesterday I had karen's korean tofu from her low carb gourmet book, and stir fried vegetables (celery, bell peppers, broccoli), and a glass of full fat milk.

Tonight the plan is going to our favorite little local thai restaurant, and I plan on most likely getting their coconut shrimp with broccoli instead of rice or noodles.
