IMHO, I always make my own decisions about whether something is SBD friendly. Many think that things are when they are not. I suggest that we use these recipes and make sure that we use ingredients that will make them SBD friendly...all purpose flour is a as is granulated sugar!!...but we can make our substitutes!!

Are you sure coconut milk is ok on phase one of south beach. It is really sweet?

Yes, it is allowed as its listed in the allowed condiments, see below:

The only thing I don't like in that list is edamame (soy beans)
I have tried those and hate them. But I do like the taste of toasted soy nuts.

Also I have come to the conclusion that soy has more fat content than I want in my diet.

I may still use tofu once in awhile in my stir-fry dishes, but otherwise I don't think I am going to eat soy on a regular basis.

Phase 1

Makes 6 servings

Creamy lemon dressing adds a refreshing kick to this chicken salad. Select the sturdy inside leaves of the lettuce head to hold the salad. Each leaf should hold about one cup of chicken salad. Serve immediately after filling the lettuce cups.

4 (6-ounce) boneless, skinless chicken breast halves
1 bunch asparagus, trimmed (about 1 pound)
1/2 cup fat-free plain yogurt
1/4 cup mayonnaise
3 tablespoons fresh lemon juice
2 stalks celery, thinly sliced
3 tablespoons thinly minced red onion
2-3 tablespoons finely chopped fresh tarragon
Salt
6 leaves butter lettuce

1. Trim excess fat and skin from chicken. Place chicken and 4 cups of water in medium Dutch oven or heavy saucepan over medium-high heat. Bring to a simmer; cook 10 minutes, or until chicken is just cooked. Transfer chicken to bowl. Let chicken cool, and slice into 1-inch strips.

2. Bring water to a boil in medium saucepan over high heat. Add asparagus and cook, 3 minutes, until tender-crisp. Drain and rinse with cold water. Slice diagonally into 1/2-inch pieces.

3. In medium bowl, combine yogurt, mayonnaise, and lemon juice. Add chicken strips, asparagus, celery, onion, and tarragon. Season with salt to taste and add one scoop of mixture to each lettuce leaf.


Per serving:
235 calories
24 g protein
9 g carbohydrate
3 g fiber
11 g total fat
2 g saturated fat
64 mg cholesterol
249 mg sodium

Grapefruit brings a refreshing taste, a pretty look, and a healthy dose of vitamin C and fiber to this salad. To easily section the grapefruit, use a paring knife to cut the peel from the flesh and trim excess pith. Placing the knife blade between fruit section and membrane, carefully cut each section out one by one. Using leftover cooked chicken breasts cuts the total time for this recipe in half.

1 tablespoon minced red onion
1 tablespoon sherry vinegar
2 1/2 tablespoons extra-virgin olive oil, divided
3/4 pound boneless, skinless chicken breasts
1/2 (1-pound) head green-leaf lettuce, torn into bite-size pieces (4 cups)
1/2 pink grapefruit, sectioned
Salt and freshly ground black pepper

Combine onion, vinegar, 2 tablespoons of the oil, 1/8 teaspoon salt, and 1/8 teaspoon pepper in a jar with a lid. Close tightly and shake vigorously to combine.

Season chicken with salt and pepper. Heat remaining oil in a large skillet over medium-high heat; cook chicken until browned, 5 to 7 minutes per side. Remove from heat, cut into 1/2-inch slices, and toss with 1 1/2 tablespoons of the dressing.

Gently toss together lettuce, grapefruit, and remaining dressing in a large bowl. Season to taste with salt and pepper. Serve salad topped with chicken slices.

Per serving:
380 calories
41 g protein
8 g carbohydrate
2 g fiber
20 g total fat
3 g saturated fat
249 mg sodium

Default Savoury Crepes/Wrap

The following recipe is an adaptation of one from The Crepe Comparison Test, which came about after a conversation with a couple of forum members on the merits of various crepe/pancake recipes.

I decided to make a version that I could use as a savoury wrap, and this is the result:


I whisked 1oz of Boursin Light Garlic & Fine Herbs (Philadelphia Light would be an ideal substitute) with one large egg until thoroughly mixed. I then left it to stand so that some of the froth could subside.

When ready, I sprayed a 9" crepe pan with a the UK equivalent of Pam Olive Oil, and then heated the pan over a medium heat.

I then poured the 'batter' into the pan, making sure that it completely covered the bottom. When the top was 'set' I flipped it over to brown the other side, and then left it on a plate to cool.





When I was ready to use it, I covered it in salad leaves, tomatoes and tuna mayo, and rolled it up to make the 'wrap'.





Apologies for the blurry pic, but I wanted to show how good the wrap looked when I cut it in half.

Obviously you can use any filling you want, and remember to keep the ratio of 1oz cream cheese to one large egg for each wrap you want to make.

I posted this in a members-only Weight Loss Challenge forum on another website, but it is my recipe, so I copied and pasted it here - which is why it may seem somewhat obvious to all of you.

Spicy Turkey Balls
2 lbs. ground lean turkey (I used a 93/7 mix and bought 2 lbs. so I could cook this once and use it for two recipes this week.)
2 lg shallots, diced
1 egg
1 c. reduced fat parmesean cheese (eyeball it)
2 t. tomato paste (I use the kind from a tube and eyeball it.)
a palmful of crushed red pepper flakes
a palmful (maybe less) of ground sage
about the same amount of thyme leaves - dry (Do not measure this in your palm - it's very painful!)
some salt and pepper (I use Adobo san Pimiente instead of salt.)

Mix it and roll it into two batches of mini meatballs. Mine were smaller than a ping pong ball. Brown batch number one in a little canola oil (to keep it healthy). When the meatballs are sort of crispy on two or three sides, remove them to a bowl and let cool before refridgerating. (These were the ones I saved for this evening's dinner.)

Repeat with batch #2.

Spicy Meatball Soup Ingredients
1 lg. can of plum tomatoes in crushed tomato juice
1 bunch of kale, chopped, stems removed (yes, the whole bunch!)
3 medium yellow/summer squash, chopped into bite-sized pieces
1 small can of red kidney beans, drained
1 small can of great northern beans, drained
1 lg. carton of ff chicken broth
add some pepper and Adobo san Pimiente or salt to taste

Batch #2 goes into a soup pot with the plum tomatoes and crushed tomato juice (just smoosh up the tomatoes in your hand a bit), 1 bunch of kale, chopped, stems removed (yes, the whole bunch!), and the yellow/summer squash. Add the entire carton of chicken broth, the beans, some pepper, and some Adobo san Pimiente or salt. Cook over medium heat until the squash begins to look translucent and the kale gets soft and begins to break down a bit. Serve alone or with pasta or rice. It's really very filling on its own - no carbs necessary.

Me too!!

I got some turkey meatballs at the butcher yesterday and they were already cooked and delish...BUT they were loaded with some very bad ingredients and I was just thinking that I'd really like to make my own meatballs!!!

Default Grilled Salmon with Rosemary

Grilled Salmon with Rosemary

Serves 2

Ingredients
1/2 pound salmon
1 teaspoon extra-virgin olive oil
1 teaspoon fresh lemon juice
1/8 teaspoon salt
Pinch freshly ground black pepper
1 clove garlic, minced
1 teaspoon fresh rosemary leaves, chopped, or 1/2 teaspoon dried, crushed
Fresh rosemary sprigs (optional)
Capers (optional)

Instructions
Cut the fish into 2 equal-size portions. Combine the olive oil, lemon juice, salt, pepper, garlic, and rosemary in a bowl. Brush the mixture onto the fish.

To grill, arrange the fish on a grill rack or use a grill basket sprayed with olive oil cooking spray. Grill over medium-hot coals until the fish flakes easily (allow 4–6 minutes per 1⁄2" of thickness). If the fish is more than 1" thick, gently turn it halfway through grilling.

To broil, spray the rack of a broiler pan with olive oil cooking spray and arrange the fish on it. Broil 4" from the heat for 4–6 minutes per 1⁄2" of thickness. If the fish is more than 1" thick, gently turn it halfway through broiling.

To serve, top the fish with capers, if using, and garnish with rosemary sprigs, if desired.

231 calories
18 total fat (3 g sat, 15 g mono)
67 mg cholesterol
1 g carbohydrate

0 g fiber
